How are you coping with the continued threat of COVID-19?
I saw a tweet yesterday from @chel_c_cam that characterizes how I feel perfectly.
”I just…keep seeing people on social eating at restaurants, traveling, doing whatever and I’m sitting in my apartment like I’ve hallucinated a pandemic.”
I am surprised how many people have started to go on with regular life despite a raging Pandemic. I guess denial is a way for many to cope and that would explain the irrational way people are getting together in droves and going about all the social business like in BC times. BC means before corona of course. I have even witnessed employees at cafes and restaurants with masks hanging off chins, noses uncovered or even gasp-no masks at all! I am totally baffled and I kind of want to hole up again while I wait and watch to see what happens next from my hidey-hole.
The only thing we have started to do is go to public parks again. My kids needed this badly. We go early in the morning before anyone else comes and the kids play like crazy. As people begin to show up, we leave. I am not comfortable with the exposure and no matter what, I do not need the news to tell me that the one thing kids share well are germs. OMG I cannot even begin to start talking about school in the Fall.
As this virus ravages our nation, stay home when possible. Wear a mask, keep your distance and keep your social activities outside. I am not a doctor and honestly I do not trust our nation’s leadership but there is enough global news coming through to say that masks, washing hands and social distance are the way to slow the spread. I will take these measure to heart to protect the ones I love and my community.
Raw Style Salsa Verde
Prep: 10 mins
Yield: about 2 cups
Ingredients: 5 tomatillos peeled and washed, 1 onion halved and peeled, 2 cloves garlic peeled, 1/2 bunch cilantro, 2 small jalapenos without the stem, 1/2 cup water, pinch of salt
1. Put everything in the blender and blend until liquified
2. Taste for salt. If you love cilantro like we do, add some roughly chopped to finished salsa and stir in by hand
Easy Basic Guac Recipe
Prep: 5 mins
Yield: about 2 cups
Ingredients: 5 small or 3 large ripe avocados, 1/2 lime squeezed, salt to taste
1. Scoop avos into a bowl
2. Mash with a fork
3. Add salt and lime
4. If ya wanna get fancy, go to town by adding in onions, cilantro etc, but since my kids are picky, I leave all the jazz on the side to mix in as I eat.
